Carricante bidrager med syre og spændstighed, mens Catarratto giver frugt og fylde.\u003c\/p\u003e\n\u003cp\u003eVinen kommer fra Contrada San Lorenzo ved Randazzo på Etnas nordside, hvor vinmarkerne ligger omkring 750 meter over havet. De 15–20 år gamle vinstokke vokser i vulkansk jord, og druerne vinificeres ved kontrolleret temperatur i ståltanke. Vinen modner derefter i fire måneder i stål, så druernes frugt og friskhed får lov at stå tydeligt frem.\u003c\/p\u003e\n\u003cp\u003eI glasset har Fumante en strågul farve med grønne reflekser. Duften byder på frisk frugt med hvidt frugtkød, mens smagen er sprød og livlig med en flot syre og en karakteristisk mineralsk, flintet eftersmag. En vin, der er både umiddelbar og interessant – og som viser en anden, mere kølig side af Sicilien.\u003c\/p\u003e\n\u003cp\u003eEt oplagt valg til fisk og skaldyr, pasta med fisk, grillede grøntsager eller en enkel risotto med citron og urter. Fra ejendommen i Contrada San Lorenzo ved Randazzo på Etnas nordside skaber de vine, hvor lokale druer og vulkansk terroir er i centrum.
